Truffle Buttered Beef Sandwich
I opened the fridge at home and saw my dad was marinating steaks. I had been wanting to try a simple recipe (with slight variations) that Ina has in her recipe book. This was my chance… so I took it!
These are Ina’s instructions:
1 1/2 – 2 pounds filet of beef, trimmed and tied
1 tablespoon unsalted butter, room temperature
Kosher salt & coarsely ground black pepper
2 French baguettes, 18-20 inches long
3 ouces black truffle butter, room temperature
1 (2-ounce) chunk good Parmesan cheese
Fresh baby arugula
Preheat oven to 500 degrees (Be sure your over is very clean!)
Place beef on a sheet pan and pat the outside dry with a paper tower. Spread the unsalted butter all over the beef with your hands. Sprinkle beef evenly with 1 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Roast exactly 22 minutes for rare and 25 minutes for medium-rate.
Remove beef from over, cover tightly with aluminum foil and allow to rest at room temperature for 15 minutes. Remove the strings and slice the filet about 1/4 inch thick.
Split the baguettes lengthwise but not all the way through. Spread the bottom halves generously with the truffle butter. Top with a layer of sliced beef and sprinkle with salt and pepper. Using a vegetable peeler, shave the Parmesan into thin shards and scatter over the sliced beef on each sandwich. Finish by adding arugula leave. Fold the tops of the sandwiches over, cut each baguette diagonally into 3 or 4 sandwiches. Serve right away!
The variations I made to this sandwich were-
1.) My dad grilled the steaks (Thank, Dad! They were gooood!)
2.) I didn’t want to buy a bag of arugula. Instead I bought a bag of spring mix, which included arugula!
Tasty sandwich though!
In the back of Ina’s book are questions and answers. Someone asked how to reheat a baguette. Ina’s answer: Preheat your oven to 350 degrees. Dunk your baguette in cold water and immediately place it in the oven. Toast for about 10 minutes. The crust will be crispy, the inside will be soft!
